In the morning, we often crave something sweet, but we don’t always have the time (or inclination) to prepare complicated dough. Between work, school, and various commitments, breakfast often ends up being a quick and unsatisfying affair.

Yet there’s a simple solution: a light cake that can be made in just a few minutes, with common ingredients and no kneading required. All you need is a blender and a few ingredients you probably already have at home.

The result is a soft, natural dessert, perfect for starting the day with something homemade, with no added sugars and no traditional flour.

A simple but surprising dessert

This recipe proves that you don’t need a long list of ingredients to make something delicious. The dough base is made up of a few essential ingredients that come together to create a soft and delicate texture.

The ingredients are:

  • 1 ripe apple
  • 1 egg
  • 125g of natural Greek yogurt
  • 30 g of corn starch
  • a few drops of lemon juice

The apple is the key ingredient in this recipe: it adds natural sweetness and helps keep the cake moist and soft. Greek yogurt makes the batter creamy and light, while the egg helps the cake firm up during baking. Cornstarch, on the other hand, replaces traditional flour and contributes to the texture.

Very quick preparation

One of the great advantages of this cake is that it does not require any special techniques or complex tools.

To prepare it, just a few steps are needed:

  1. Peel the apple and cut it into pieces.
  2. Place the apple, Greek yogurt, egg, cornstarch, and lemon juice in a blender.
  3. Blend everything until you obtain a smooth and homogeneous mixture.
  4. Pour the mixture into a small pan lined with baking paper.

At this point you can cook the cake in a preheated oven at 180°C for about 25-30 minutes , until the surface becomes lightly golden.

Alternatively, you can also cook it in an air fryer at 170°C for around 18-20 minutes .

Ideas to personalize it

The basic recipe is very simple, but for this very reason it lends itself well to small variations.

For example, you can add:

  • a sprinkle of cinnamon for a warmer aroma
  • a pinch of vanilla
  • a few drops of honey if you prefer a sweeter taste
  • a handful of raisins or dark chocolate chips

Fruit can also be a change: ripe pears or mashed bananas can work very well as an alternative to apples.

This cake is ideal for breakfast, but it can also be a light snack or afternoon treat. It’s soft, delicate, and not too heavy.

Since it’s made with simple ingredients and no added sugar, it’s also an interesting choice for those looking for more balanced desserts or wanting to cut down on packaged products.

Plus, thanks to its quick preparation, it’s one of those recipes you can improvise even at the last minute.
