These apple and almond cookies are easy to make and require only two ingredients. No eggs, butter, or flour are needed: just use a food processor to make the dough and bake in about 20 minutes.

The flavor is delicate, with the sweetness of apple and the flavor of almonds. These rustic biscuits are perfect for those looking for something a little less sweet to accompany coffee, tea, or plain yogurt.

This preparation produces a different result than traditional shortcrust pastry: the inside remains quite soft, while the surface driers during baking. To obtain uniform biscuits, it’s best to press the dough slightly and keep all the biscuits the same thickness.

The choice of apple is especially important for flavor. A sweet variety, like Fuji, allows for a more pleasant flavor without adding sugar.

Ingredients for about 12 biscuits

  • 200g apple, weighed after removing the core
  • 200 g peeled, unsalted almonds

Optional: a pinch of cinnamon to flavor the dough.

Preparation: about 10 minutes
Cooking: about 20 minutes
Temperature: 180 °C, static oven

How to prepare them

  1. Prepare the fruit. Wash the apple, remove the core, and dice it. You can keep the peel, after washing it thoroughly, or remove it if you prefer a smoother texture.
  2. Process the ingredients. Place the almonds in a food processor and blend. Add the apple and pulse the blades at short intervals, stopping to scrape any remaining mixture toward the center.
  3. Check the dough. It should be moist but firm enough to hold its shape. If it still contains large pieces of apple, knead it for a few more seconds.
  4. Shape the cookies. Divide the mixture into 12 portions. With slightly dampened hands, shape them into balls and flatten them onto the parchment-lined baking sheet, creating small discs.
  5. Bake. Cook in a preheated oven for about 20 minutes. Check towards the end: the edges should brown but not get too dark.
  6. Let them cool. Wait a few minutes before removing them from the pan, then carefully transfer them to a wire rack.
