Rosemary powder is a simple yet valuable ingredient: just a tiny amount is enough to give dishes a bold aroma and aromatic flavor. It’s an excellent way to preserve this Mediterranean herb for a long time and always have it ready to use, without having to resort to fresh leaves. Preparing it at home is easy, inexpensive, and allows you to monitor its quality.
Choosing and preparing rosemary
To obtain a fine, aromatic powder, it’s important to start with good-quality raw materials. The ideal is to use freshly harvested rosemary, preferably during the months when the plant is richest in essential oils. The leaves should be:
- green and fragrant
- not yellowed
- free from soil residues or humidity
Remove the needles from the sprigs and rinse them quickly under cold water. Pat them dry carefully with a cloth or paper towel to remove as much moisture as possible.
Drying: the fundamental step
To obtain a fine, long-lasting powder, the rosemary must be completely dry. There are several methods:
- Air drying
This is the most natural method. Arrange the needles on a tray or rack in a dry, well-ventilated place, away from direct light. The process can take three to seven days, depending on the humidity of the environment.
